Blacken Salmon

Spice Mixture   

2 tablespoons paprika    Salmon
1 tablespoon cayenne pepper
1 tablespoon onion powder
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/4 teaspoon thyme
1/4 teaspoon basil
1/4 teaspoon oregano


In a small bowl, mix the above spices.  Brush salmon fillets with oil and sprinkle evenly with the spice mixture.  In a large heavy skillet (I use my cast iron skillet) over high heat, cook salmon seasoned side down until blackened.  Transfer to a cooking sheet and complete cooking in the oven.  You can also turn the fillets over and continue cooking in the skillet. I do a few at a time so it is easier to continue cooking in the oven.  I also leave the salmon on the shell until after they are cooked.  You can certainly blacken both sides of the salmon if you get pieces without the shell.  I find the salmon pieces are a little to spicy if I do both sides so you may need to adjust the spices accordingly.
